None is overly complicated, but because the recipes feature numerous international ingredients (e.g., tamarind paste, palm sugar, Shaoxing wine), they require some preplanning. Budget-friendly and flavorful chicken thighs are Henry's favored cut, but she also uses breasts, legs, whole chickens, and squabs.
