What’s better than one yummy cookie? Two delicious cookies sandwiching a tasty filling. Mubarak, creator of the Browned Butter Blondie blog, believes that there truly is a sandwich cookie for “every mood, every special occasion, every craving,” and she sets out to successfully prove her thesis with this singularly focused, perfectly executed cookbook. After opening with sections detailing necessary pantry staples and baking basics, Mubarak provides recipes for 65 different sandwich cookies arranged by categories such as “Cool Cookies” (ice cream sandwiches) and “Cocktail Cookies” (savory sandwich cookies to be served with drinks). A chapter dedicated to fillings such as salted-caramel and chai-spiced buttercream rounds things out. Each recipe is laid out with easy-to-follow instructions as well as mix-and-match suggestions for swapping out fillings and an Instagram-worthy photograph of the end result.
VERDICT While there is no shortage of excellent guides to cookie baking, including Mindy Segal’s Cookie Love and Alice Medrich’s classic Chewy Gooey Crispy Crunchy Melt-in-Your-Mouth Cookies, Mubarak’s tempting array of sandwich cookies will prove to be the stuff of sweet dreams for home bakers.
