Celebrity chef Ramsay (Ramsay in 10) travels the globe in the National Geographic series Uncharted, in which he explores food and cultures across the world. This book covers the first three seasons of the show and travels to 21 destinations, including Peru, New Zealand, India, Portugal, Iceland, England, and more. As Ramsay explains in the introduction, most restaurant chefs rely on outside sources for their ingredients, unlike the cultures represented here, where the cooks are more self-sufficient and obtain their ingredients from local sources. Ramsay plunges into the action and participates in foraging, fishing, and diving for the ingredients used in the recipes. Many recipes feature seafood, like gin-poached oysters from the Jurassic Coast of England and grilled sardines stuffed with bell peppers from Portugal. Several U.S. locations are also included, with such delicacies as NOLA-style BBQ shrimp and honey-roasted heirloom squash. Recipes are adapted for use in home kitchens as opposed to some open-fire cooking methods featured on the show.
VERDICT Beautiful photos of landscapes and the food enhance the book, which is sure to be a hit with fans of Ramsay’s television series as well as with cooks looking to branch out into more unfamiliar fare.
