Hoping to give her camping friends an alternative to boxed mac-and-cheese and hotdogs roasted on a stick, Donovan (
30-Minute Cast-Iron Cookbook), a recipe developer, food blogger, and prolific cookbook author, came up with this collection of recipes designed to be cooked either directly on a grill, wrapped in foil and grilled, or cooked in a skillet or pot on a simple camp stove. After covering the necessary equipment and tips for keeping food safe outdoors, Donovan delivers recipes for dressing dishes up (marinades, sauces, etc.) as well as for a range of items, from breakfast treats to desserts, that can be successfully prepared in the wild. Whether it’s chicken and dumplings, grilled eggplant parmesan, grilled peach and arugula salad with goat cheese, or Mexican hot chocolate, everything is presented in an easy-to-access format conducive to use by campers on the go. Many of the recipes also include a boxed section with tips for adapting the dish to a home kitchen.
VERDICT Campers will be happy to find Donovan’s helpful cookbook in their backpack, given that Marnie Hanel and Jen Stevenson’s excellent The Campout Cookbook may be hard to source, and Emily Vikre’s New Camp Cookbook on the Trail primarily focuses on making packable, pre-prepped treats and meals.
