In her newest title, Hay (Basics to Brilliance) offers healthy, mostly plant-based recipes that can be prepared quickly. Some recipes build on each other, offering readers options for incorporating leftovers or otherwise simplifying meal preparations. Many recipes require ten or fewer ingredients, with a focus on fresh produce and other whole foods. Recipes are also meant to be family-friendly, and Hay uses vegetables in unexpected ways. For example, broccoli is charred and roasted with halloumi but also tucked away in a dough that can be used for pizzas and tarts. The gorgeous photographs of Hay’s meals, and the ingredients used to create them, belie their simplicity. Because of the overlap in ingredients and preparation methods, readers can easily experiment with a number of recipes, whether their tastes lean toward fare such as crunchy raw Pad Thai or oven-baked super-green falafels.
